Paleo hamburger buns

This Paleo recipe makes 8-10 buns. Approximate preparation and cooking time: 35 minutes. Inspired by recipes from Against All Grain and Paleo Comfort Foods by Julie and Charles Mayfield.

Not surprisingly considering the ingredients, these buns do have a slightly nutty and coconut flavor. They are also more dense than regular, wheat-based hamburger buns. I like to use them for open-faced sandwiches and burgers.

Ingredients

  • 1 3/4 cups almond flour
  • 2 tbsp. coconut flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1/4 cup coconut oil
  • 6 eggs
  • 1/2 tsp. honey
  • 1/2 tsp. poppy or sesame seeds (optional)

Directions

  1. Preheat oven to 400°F.
  2. Grease 2 baking sheets.
  3. Using a stand mixer, beat eggs on medium-high speed for 5-7 minutes until eggs are fluffy and have doubled in size.
  4. While eggs are beating, combine the dry ingredients in a medium-size bowl.
  5. Mix in the coconut oil and honey.
  6. When eggs are ready, fold about half of the egg mixture into the dry ingredients. Once that’s blended together, add in the rest of the egg mixture.
  7. Spoon out the batter onto the greased baking sheets. Sprinkle the buns with poppy or sesame seeds if desired.
  8. Bake for 12-15 minutes or until golden brown and a toothpick inserted into the center of the buns comes out clean.
