Almond Bliss Bars

  • 8 oz. shredded, unsweetened coconut
  • 3.5 oz. dark chocolate (72%-90% cacao)
  • 2/3 cup chopped almonds
  • shredded coconut and chopped almonds for topping (optional)
  1. Break chocolate bar into about 8 squares.
  2. Blend chocolate and coconut in high-powered blender or food processor for about 10-15 minutes, until the mixture is completely smooth and creamy.
  3. Stir in the chopped almonds.
  4. Empty batter into an ice cube tray or chocolate mold.
  5. Top with shredded coconut and almonds, if desired.
  6. Store in refrigerator for 10-15 minutes, until chocolate hardens.
