How to make your own coconut butter

If you haven’t tried coconut butter yet, you haven’t lived. Seriously, this stuff is amazing!
You may not realize this because I post a lot about the wonders of the coconut, but until recently I didn’t even like coconut. As a child, I wouldn’t touch the stuff with a 10-foot pole and even as an adult, any coconut-flake-filled candy would have me gagging immediately and spitting it out. I think it had something to do with the texture more than anything. The only thing I could tolerate was Thai iced tea.
At least, that’s what I thought until we started eating Paleo and dairy became a no-no in our house. Now, I’m cooking with coconut oil and making dairy-free ice cream with coconut milk, and you know what? I love coconut. I still can’t stand the sweetened, chunky shredded coconut they put in candies, but who needs that when there are so many delicious coconut products out there that you can buy or make yourself?
I decided to try to make coconut butter today for the first time. It is so yummy! I ate it plain and I tried some with apples and on blueberries. It was delicious any way I ate it. I know my husband and son will be relishing this stuff. Yum, yum, yum.
So, I’m adding coconut butter to my list of “must-have” staples. And it doesn’t get any easier than this to make something: 1 ingredient and 1 step. How’s that for simple?
Oh, and it’s frugal, too. A 16-ounce jar of Artisana Organic Raw Coconut Butter costs $12.26 at Amazon.com. Making an equivalent amount of coconut butter using Let’s Do Organic Shredded, Unsweetened Coconut from Amazon.com costs $3.36 (using the Subscribe & Save program). - 8 oz. shredded, unsweetened coconut
- Blend coconut in high-powered blender or food processor for 10-15 minutes.

I tried this, and by the end it all just stuck to the sides even when I pushed it down with the spatula repeatedly, so it never got smooth… Do I need to start with more coconut?
I think maybe you need to let it run longer. Mine stuck to the sides, too, but I just let it run its course. Once the oils from the coconut are released, it turns into a liquid and it will all blend together.
Seriously, it’s that simple!? I’m a huge fan of coconut as well, so I will have to give this a try when I upgrade my blending capabilities. For now, you have me thinking about coconut in general, and I know where there’s one ready to pick. Going to have to do that this weekend!
